It’s been such a long busy week. I’m so happy that the weekend has come around again! 😀
No work out this morning which I was a little disappointed about. I woke up way too late and had to rush a little to get ready, so its going to be one major make up session tomorrow morning. Despite the mad rush I did have time to take delivery of a very generous package from Dorset Cereals.
I love Dorset Cereals and so I was very excited when this was on my door step this morning to review for the blog. Breakfast has to be my favourite meal of the day and even when a little rushed I always have to a special and delicious breakfast.
I decided to have the Berries and Cherries muesli from my Dorset Cereal stash with a chopped apple, a tablespoon of granola, extra oats and soya milk. It was so good and all of the berries in the muesli made it an extra special breakfast!
For lunch I had defrosted some parsnip, cauliflower and cannellini bean soup and also enjoyed a slice of spiced apple and date bread.
The soup is basically baked parsnips, cauliflower and cannellini beans blended together with vegetable stock and nutmeg…simple and tasty!
Dinner tonight was another tofu fest. I marinated some tofu in soya sauce, oyster sauce, sesame oil and black rice vinegar and then cooked in a wok. This was served with mixed vegetable rice with sesame seeds and cashew nuts.
I’ve never had vegetable rice until now. I’ve seen cauliflower rice before in blog land, but I decided to experiment a little. It’s very simple and easy to make. I just shredded broccoli, brussel sprouts and carrots in a food processer. This vegetable mixture was then stir fried in a little canola oil and cashew and sesame seed were stirred in when the vegetables were cooked.
For dessert I had some pumpkin mousse with a little almond butter stirred in topped with two warmed chocolate chip and pecan cookies.
