What’s deliciously good, tasty hot or cold, perfect with tea on a cold wet day, can be eaten for breakfast and makes you feel all warm and tingly inside????
Cinnamon Fruit and Nut Quick Bread…
- 1 3/4 cups of whole wheat spelt flour
- 1/4 cup of brown sugar
- 1/4 cup of canola oil
- 1/4 cup of Total Greek Yoghurt
- 1 egg and 2 egg whites
- 1 1/2 tsps of cinnamon
- 1 tsp of vanilla extract
- 1/2 tsp of baking powder
- 1/2 tsp of baking soda
- 1 cup of chopped fruit and nuts of your choice
First of all beat the canola oil and sugar until light and fluffy.
Add the egg and egg whites one at a time and beat well in between each addition.
Beat in the vanilla extract. The mixture should be come light and fluffy.
This stage is crucial to get the most air into the mixture as possible…so keep mixing! 🙂
Next in a separate bowl sieve the flour, cinnamon, baking powder and baking soda a few times to get as much air in as possible.
Add the flour and Greek yoghurt alternately, starting with the flour and ending with the flour.
At this point it is best to use a spatula to stir in the flour and yoghurt slowly until just combined. This will prevent the gluten in the flour to stretch which can result in a heavy quick bread.
Next coat the fruit and nuts in a little flour to prevent them from sinking to the bottom of the mixture when baking.
Add the fruit and nuts to the batter and transfer to a pre-prepared loaf tin.
Bake in the oven at gas mark 4 for 40 minutes or until golden brown. I normally stick a cocktail stick into the centre of the quick bread. If it comes out clean it means its cooked through.
Be prepared for the delicious smells coming from the kitchen…
Allow to cool completely before removing from the loaf tin.
