Hey guys! I hope you have all had an amazing weekend and enjoying the gorgeous weather. I know I certainly have and was one of the reasons I didn’t post my usual Friday Feature post. I decided to take Alfie out as he has been hibernating in the library revising for his finals. He sat the first on Friday just gone, so I thought he deserved a treat and it was nice to see him for more than 5 minutes in a day.
I’ve been eating some lovely food over the weekend, all celebrating the sunny weather. I hope it’s here to stay!
Friday started with a yoga sequence designed to target the core from Yoga Download.com followed by an upper body workout with weights. Breakfast was weather inspired with a sunny looking yoghurt mess made from kefir, Dorset Cereals simply tasty muesli, mango, blackberries, persimmon, dates, dried cranberries and coconut.
I love yoghurt messes. You can throw practically anything in them and they still taste great.
Lunch was the same on both Friday and Saturday. I dived into a huge monster pasta salad. I really like pasta salads, but find the ones in the shops just a little bit too heavy and loved this version just because it was lighter and satisfied by pasta cravings just so.
This light pasta salad included mixed leaves, olives, anchovies, sundried tomatoes sprinkled with whole wheat baked pasta in a tomato sauce.
There is literally nothing that can keep me out of the sunshine, not even work! I’m a major sunshine lover so I decided to head out for my lunch break on Saturday and eat outside the lovely Cathedral.

Rewinding back to Friday I treated Alfie to a meal at our favourite restaurant The Saxon Mill. I have already raved about my adoration for this restaurant before and I think I will continue raving about it forever more because the food is out of this world. The old mill is situated by a beautiful river complete with waterfalls- very picturesque!
Taking full advantage of the warm weather we decided to eat outside on the balcony…
It seems like the chef has also been inspired by the weather as there was a brand new menu on Friday with lots of seasonal produce.
Breakfast and dinner on Saturday was my Banana and Vanilla Tofu and a roasted vegetable wrap with steamed veggies.
This morning I woke up bright and early to go for my weekly long run. I decided to stick to just 10K today to re-check my speed. It wasn’t too bad I managed to do it in 1 hour and 6 minutes. Not an amazing time or speed, but I’ve seen a 10k training plan in Women’s Running that I want to try this week. It looks so tough though!
I refueled with a fab and delicious breakfast outside in the sun.
*Chocolate Pudding with Custard*
For the Chocolate Pudding…
- 1/2 cup of quinoa flakes
- 2 tsp of cocoa powder (I used Green and Black’s)
- 1 tbsp of agave nectar/Sweet Freedom/honey
- 1 tsp of maca powder (optional)
- 1 tsp of lucuma powder (optional)
- 1 tsp of ground flax (optional)
- 2 tbsps of dried cranberries
- 2 cups of vanilla rice milk (or any other milk alternative)
- 1 cup of water
For the Custard…
- 1 frozen banana
- 2 tbsp of peanut butter
- vanilla rice milk (or any other milk alternative)
Leave the quinoa oat mixture to soak overnight in the fridge or at room temperature. For the custard layer it’s just a case of blitzing everything up to make a soft serve.
Now GO get layering up!
As breakfast was so late and super filling I snacked throughout the day on two pink lady apples a persimmon and a Nakd Apple Pie bar. I ate all this in the park near my house. Although it wasn’t all pleasure and relaxation I had a huge pile of marking to get through.
Once back home I got my cook-on in the kitchen and cooked up some treats to get me through the week, including a Squash and Bean Tomato Stew tonight for dinner.
I served it with brown rice and purple sprouting broccoli or “fake broccoli” as Alfie likes to call it because he hates it compared to regular broccoli. I loved this as a stew for the warmer months as it’s really light. The recipe will be up in a single post later this week.
Whilst stocking up my freezer I found some batter for some gingerbread from my Babycakes recipe book. Of course I had to use it up, but rather than making a loaf I made gingerbread cupcakes.
I had one for dessert topped with Darck Chocolate Dreams “frosting” and choccy seeds with two pink lady apples.
Well that’s my weekend folks! Even though nothing significant has happened I’ve actually really enjoyed myself just pottering about and enjoying the sunshine. I think I spent most of my time outside making the most of the weather. A great end to a productive week!

Are you an outdoor or indoor person? When the sun is shining I find it really hard to stay indoors for too long, which is going to be a struggle when I start writing my thesis this summer. There have been occasions where I have taken my laptop outside in the garden to study. What can I say? I’m a bit of a sun worshipper with suntan lotion of course! 😀
