Cookies and Cream Protein Ice Cream

I sent off my email to my Foodie Blog Swap Partner today. I’m still so excited about this!! I cannot wait to see everyone’s swaps at the end..yay! I’m also excited about finding out Alfie past his finals- he’s officially a doctor!!!! :) I’ve been grinning from ear to ear since his results came out this afternoon. There’s going to be a lot of celebrating this weekend!

Well, my food over the last few days has been what has been convenient and easy as I’ve had a few long days in the lab doing experiments. Although my meals still just as tasty of course. For breakfast yesterday I had two OIAJ. I’ve had these two empty peanut butter jars in the back of my cupboard for some time now, so I thought yesterday was the perfect time to dig them out. I filled them with the simplest mix of oats that I’ve had in a while…

1/2 cup of oats, 11/2 cup of water, 1 cup of oat milk, 1 chopped apple, chopped dates and cinnamon-and that was all! This was amazing and I loved how the peanut butter melted down the sides of the jar and into the oats.

After my yoga and abs and core workout this morning I had a delicious fruit smoothie made with passion fruit, Rachel’s Organic coconut yoghurt (LOVE!), a banana, oat milk, lucuma powder and hemp protein powder. I couldn’t help but get stuck into my box of PB Puffins topped with a topped apple also. The PB Puffins taste fabulous! I’m so glad I ordered them.

Another smoothie took centre stage for last nights dinner after getting home late from the lab and my usual Monday gym workout. This time a green smoothie, which included spinach, a banana, chocolate soya milk, raspberries, water, xanthan gum, hemp protein powder, coconut butter and maple syrup.  Toppings included banana chips, goji berries and dried fruit and nuts…YUM! :)

Lunches on both days have been the same huge salad…

Left over stir fried veggies (aubergine, mushrooms, broccoli and cauliflower), lambs lettuce, rocket, basil tofu, cucumber and tomatoes.  I do love a huge plate of veggies. If you has served this in front of me a few years ago I would have probably cried!!!

Dinner tonight was a lovely stir fry of mixed veggies in sauce made from soy sauce, oyster sauce, rice vinegar and 5-spice powder served with some buckwheat soba noodles dressed in sesame seed oil and black sesame seeds.

I had cravings for Cookies and Cream Ice Cream this afternoon so I made a healthy portion for dessert tonight this time with a swirl of peanut butter sauce.  Cookies and Cream is the BOMB! I’m afraid that my tub isn’t going to last long at all and I’ve already got my greed lil’ eyes on some of the other flavours too.  A few of you have been asking what goes into my version of this bowl of heaven.

Ingredients

  • 1/2 a scoop of Spiru-tein Cookies and Cream whey protein
  • 2 tsps of xanthan gum
  • ice cubes or crushed ice (amount depends on how big you want your portion)
  • 100 ml of rice milk (or any other non-dairy alternative)

I add the rice milk to help my blender out a little, but it’s probably not necessary. Also if you have a sweet tooth you could also add a little sweetener like agave too.

DELICIOUS!

I loved my first taste of Peanut butter Puffins. They really are amazing! The texture and definitely not the taste reminded me of a cereal that I loved when I was much younger…

I used to eat these things like they were going out of fashion! I used to stick to one cereal for months and used to alternate between Corn Pops, Pop Tarts, Cheerios and Crunch Nut Cornflakes.

Now I’m more in to my green smoothies

I’m so glad that I’m far more adventurous with my breakfasts now. I don’t know how I would survive with a bowl of Corn Pops everyday! :(

    I used to eat 5 or 6 Weetabix for breakfast when I was about 5 – then I’d eat nothing all day lol! I haven’t had Weetabix in years and years…and now I have a craving :/
    I love all your smoothies :) You eat how I like to eat!

    That stir fry looks SUPER delicious, as does everything else you eat :D My favorite cereal had to be that Reese’s Cup cereal..pb & chocolate. No I probably wouldn’t eat it now, butttt I surely lived it up then ;)

    I’ve always been crazy for muesli but I used to love coco pops and honey nut flakes! Our desserts tonight look almost identical, glad your loving the protein ice cream! Try out the guar gum next time you order from iherb, it makes them so much more creamy!

    Those puffins look so yummy! I just used to love muesli (still do)- and I also loved crunchy nut cornflakes and rice crispies, but we were never allowed them and only had them when we stayed with our Nan!
    And yay to Alfie- amazing!

    Aww a huge well done to Alfie – that’s so exciting!
    Oh stop making me even more jealous by posting pictures of the puffins LOL! I’ve never heard of corn pops but if they taste similar, why did they stop doing them?!!
    When I was younger I wasn’t allowed any of the sugary cereals because I was literally a sugar freak the rest of the time! I was only allowed rice krispies, corn flakes or fruit n’ fibre when really I wanted cocoa pops, frosties and all that kind of stuff haha!
    I know how you feel about the cookies and cream protein – SO addictive. Luckily I can re-stock from a shop back home and my mum sends it up to me :P

    Congrats to Alfie! Awesome news. What is he specialising in?

    I have to say, I used to love Frosties, Bran Flakes and Crunchy Nut Cornflakes. Right now though I am in a major breakfast funk… partly because my stomach is picky with fruits and smoothies. I’m going to have to flick through your blog to find some digestive friendly ideas… any suggestions?

      Thak you! He want to go into either orthopeadic or corrective plastic surgery. He’s doing his F1 and f2 training in Oxford, so hopefully we will be moving soon.

      I was addicted to Crunchy Nut Cornflakes at one point. Is your stomach good with oats at all, or is it the fibre that it cannot handle because of your IBS?

        Oats defo work. I’ve been thinking about trying overnight oats but they all seem to contain banana, which I’m not great with. x

    Weetabix with raisins, Splitz and Fruit N Fibre were my favourite kiddie cereals: surprisingly healthy actually! And I would definitely eat them now if only I could exercise the portion control I did as a child, instead of eating half a box or more at a time.

    My favorite breakfast cereal while growing up was either Fruity Pebbles of CoCoa Puffs (hence my horse’s name of CoCo- haha!). I wouldn’t eat the fruity pebbles much today..but I still love those CoCoa Puffs!

    Congrats to Alfie, becoming a doctor is a HUGE achievement!
    I was obsessed with many different cereals when I was young, like Cocoa Puffs and Cinnamon Toast Crunch. You couldn’t pay me to eat those today but I still have a fondness for Honey Nut Cheerios :)
    PS. I’m going to Whole Foods right away to pick up some things for my swap partner!

    Ah I remember loving Corn Pops, I’d totally forgotten about them! I also used to eat Lucky Charms, chocolate Wheetos, Frosties and frosted Shredded Wheat… basically any sugar-laden kids cereal I could get my hands on. It’s no wonder I grew up with such a sweet tooth. I haven’t eaten that kind of cereal for years now and have no desire to do so… it’s porridge, pancakes and smoothies all the way for me :)

    I used to eat honey bunches of oats cereal, and I would still eat it now! It’s pretty sweet and delicious.

    Awwww, I miss Pops! Your other breakfasts really out-shine them though – will you come make me smoothies in the morning??? I wouldn’t by golden grahams now (because I’d eat the whole box) but I’d still totally eat some if the opportunity presented itself.

    I LOVE Rachels coconut greek yoghurt too – it’s so creamy and just lovely. Yum – I want some now!

    My favourite childhood cereal was Golden Grahams – so bad for you … no wonder I was a chubby child!

    When I was little I always used to like honey nut Cherios! And I remember begging my mom to buy me that awful cookie crisp cereal then being terribly disappointed that it tasted nothig like a bowl of chocolate chip cookies!
    I defently perfer my oats and bowls of coconut milk yogurt with fruit and granola for brekkie :)
