At the beginning of a new season I always feel inspired, creative and overwhelmed with ideas. I do grumble a little (ok maybe alot!) when summer comes to an end, but when this has passes I welcome autumn with huge open arms and embrace it fully. Autumn is a season full of beautiful and rich colours, seasonal fruits and vegetables, an abundance of wonderful fabrics and textures and some amazing food.
Here’s just a small snippet of some of the things about autumn that is inspiring right now:

On a cold crisp morning like today I was definitely feeling inspired by all things autumnal and decided to whip up a breakfast worthy to start such a beautiful Sunday…
*Apple Cinnamon Crumble Pancakes*
Ingredients (vegan, makes 6 pancakes)
- 1 cup of soya flour
- 1 1/2 cups of vanilla rice milk
- 1 tsp of baking powder
- 2 tsps of almond butter
- 1 chopped apple
- 1 tsp of cinnamon
- 1/3 tsp of nutmeg
- 1/2 of ground ginger
- a granola of your choice
Mix all of the ingredients together (except the apple and granola) to make a smooth batter. Once everything is well combined stir in the chopped apple pieces. Pour into a hot prepared frying pan in equal portions to make small pancake shapes. When the batter appears to form bubbles on the surface it mean that the pancakes are ready to flip over to cook on the other side.
I served mine with an extra dusting of cinnamon, a drizzle of honey, almonds, apple slices and some pink apple granola for some added crunch. These were so delicious and reminded me of everything that I love about autumn.
