Autumn Inspiration

At the beginning of a new season I always feel inspired, creative and overwhelmed with ideas.  I do grumble a little (ok maybe alot!) when summer comes to an end, but when this has passes I welcome autumn with huge open arms and embrace it fully.  Autumn is a season full of beautiful and rich colours, seasonal fruits and vegetables, an abundance of wonderful fabrics and textures and some amazing food.

Here’s just a small snippet of some of the things about autumn that is inspiring right now:

On a cold crisp morning like today I was definitely feeling inspired by all things autumnal and decided to whip up a breakfast worthy to start such a beautiful Sunday…

 *Apple Cinnamon Crumble Pancakes*

Ingredients (vegan, makes 6 pancakes)

    • 1 cup of soya flour
    • 1 1/2  cups of vanilla rice milk
    • 1 tsp of baking powder
    • 2 tsps of almond butter
    • 1 chopped apple
    • 1 tsp of cinnamon
    • 1/3 tsp of nutmeg
    • 1/2 of ground ginger
    • a granola of your choice

Mix all of the ingredients together (except the apple and granola) to make a smooth batter.  Once everything is well combined stir in the chopped apple pieces.  Pour into a hot prepared frying pan in equal portions to make small pancake shapes.  When the batter appears to form bubbles on the surface it mean that the pancakes are ready to flip over to cook on the other side.

I served mine with an extra dusting of cinnamon, a drizzle of honey, almonds, apple slices and some pink apple granola for some added crunch.  These were so delicious and reminded me of everything that I love about autumn.

Oh, those apple pancakes look like the perfect autumn food! And I love that yellow coat, I wish I could find something like that here. I love how colourful and inspirational season autumn is, it is full of possibilities :)

I love autumn and winter!! I love cosy days in, and wrapping up warm for walks! It also makes me appreciate my bikram yoga more, going in out of the cold!! Xx

I love autumn so much! I’m finding it hard to find time to read at the moment though – too much working. :(. Perhaps I shall make time tomorrow.

Oh wow so many beautiful pictures!! I’m totally in love with autumn already..all the knitwear, squash, pears, apples, cinnamon, ginger, pumpkin…aaaah I just love it!! Just makes me all warm inside hehe :)
Those pancakes sound absolutely yum – everyone is having pancakes recently, I think I need to get on it and make some soon!

I seriously love EVERYTHING about fall. It’s the best :) That pumpkin drink photo looks amazing – I’m planning on whipping up something similar this week – one of the many recipe ideas floating around my brain.

Also, though pancakes you pictured from OSG are super good! I love pancakes – yours sound tasty, too!

amazing fall pictures! I love the colours- makes me miss fall in the west. In India it is so hot and humid, nothing close to a fall here. EVER. I am currently inspired by delhi fashion week that i have been attending for 2 days. crazy bright colours on the catwalk, the total opposite of your pictures but that makes me enjoy your website even more!
