Hello everyone! I hope this week has treated you well.
Phew, this week has just flown by! It has mainly involved working on my thesis and not much else to be fair.
One exciting thing did happen this week as we did send out nearly a box full of invites at the beginning of the week. It was such a relief to get those sent out, we have had to send out at least 10 more since then too.
Since this week hasn’t been very exciting in terms of activity and basically would make a pretty boring post I thought I would photo dump my favourite meals from this week, which the thesis stress so much easier to deal with.
So I begin…
Breakfast on the go! A simple green smoothie made using unsweetened almond milk, spinach, ice, water and a banana with a Cherry and Oat Breakfast Muffintaken from the freezer, yum!
Steamed eggs!! ! OMG! These are the best eggs ever! My mum taught me this trick when she was on one of her faddy diets (sorry mum, but its true!). You make them exactly how you would a fried egg in a frying pan but without the oil, cooking them on a low heat with a saucepan lid or plate on top. The eggs cook perfectly in the steam and they don’t have that greasy fried taste either.
I had my steamed eggs with stir fried spinach, broccoli, courgettes, green pepper, baby corn, spring onions and beetroot in a lovely sesame, soya sauce and ume plum vinegar sauce. The yolks on the eggs were so creamy and delicious!
A night on the sofa called for chopped strawberries, my Gluten Free Peanut Butter Cup Cookiesand a some dark chocolate PB cups- what can I say, it was just one of those evenings!
I finally made my own falafel and I cannot believe how easy they are to make. Those up there are my Sesame, Lime and Basil Falafel of which I will be posting the recipe very soon. They were oh so good!
I had them with a salad made from steamed broccoli, green beans and tomatoes with black sesame seeds and a baked sweet potato topped with a tahini and lime sauce, yum!
Pressed, marinated and baked tofu in a soy, chilli and sesame sauce, stir fried butternut squash, kale, mushrooms, with soba noodles…yum!
Chopped apples with my favourite simply nutty Dorset’s Cereal with almond milk
On Sunday I cooked up a huge batch of brown rice to keep me sorted for easy and quick meals in the week. For lunch on Tuesday I made a lovely summery pilaf using rocket, spring onions, celery and 2 nectarines. I think the added fruit and peppery rocket really complemented the nutty flavour of the brown rice.
