Happy Friday friends! I don’t know about you but I’m so glad the weekend is hear, it has been quite a busy week for me.
With thesis writing and wedding planning being my main focus over the past couple of weeks my days have been pretty much the same day in and day out, but I have been taking some light relief in my food. Thank goodness for food!!
Being short on time seems to be the story of my life at the moment so I am just going to bombard you with some of my recent favourite eats- apologies!
Socca pizza topped with mozzarella, red peppers edamame beans, and mushrooms. I put it under the grill for a few minutes to let the mozzarella melt and go all gooey and then poured over dressing made using green pesto and fresh basil leaves.
This was one amazing breakfast! A baked Bush Bok sweet potato stuffed to the brim with peanut butter an full fat Greek yoghurt.
Baked char siu salmon with mixed roasted vegetables.
Vanilla and Cinnamon 10 hot grain oats made with almond milk and water with baked peaches, more cinnamon, goji berries and full fat Greek yoghurt. This was probably my favourite breakfast this week!
Dorset Cereal’s simply nutty muesli with a green smoothie made using half a banana, a peach, hemp protein powder, spinach, camu camu berry powder and almond milk.
I have been loving this tea to death this week!
Veggie stir fries are always delicious. I made this one with broccoli, red peppers and chestnut mushrooms with a Thai green curry paste and a dash of coconut milk. On the side I had some brown rice and some peanuts.
My usual salads were also a favourite this week. This one contained spinach, beets, peppers, tomatoes, strawberry balsamic vinegar roasted chickpeas, raw crackers and white mulberries.
Scrambled eggs with spinach and tomatoes on a Food Doctor pitta pocket with broad bean, asparagus and mint hummus, yum!
Even though my week has been pretty standard I have taken delight in lots of delicious food, which has been great!
