Standard, with a hint of delicious.

in The week that was...

Happy Friday friends!  I don’t know about you but I’m so glad the weekend is hear, it has been quite a busy week for me.

With thesis writing and wedding planning being my main focus over the past couple of weeks my days have been pretty much the same day in and day out, but I have been taking some light relief in my food.  Thank goodness for food!!

Being short on time seems to be the story of my life at the moment so I am just going to bombard you with some of my recent favourite eats- apologies!

Socca pizza topped with mozzarella, red peppers edamame beans, and mushrooms.  I put it under the grill for a few minutes to let the mozzarella melt and go all gooey and then poured over dressing made using green pesto and fresh basil leaves.

This was one amazing breakfast!  A baked Bush Bok sweet potato stuffed to the brim with peanut butter an full fat Greek yoghurt.

Baked char siu salmon with mixed roasted vegetables.

Vanilla and Cinnamon 10 hot grain oats made with almond milk and water with baked peaches, more cinnamon, goji berries and full fat Greek yoghurt.  This was probably my favourite breakfast this week!

Dorset Cereal’s simply nutty muesli with a green smoothie made using half a banana, a peach, hemp protein powder, spinach, camu camu berry powder and almond milk.

I have been loving this tea to death this week!

Veggie stir fries are always delicious. I made this one with broccoli, red peppers and chestnut mushrooms with a Thai green curry paste and a dash of coconut milk.  On the side I had some brown rice and some peanuts.

My usual salads were also a favourite this week.  This one contained spinach, beets, peppers, tomatoes, strawberry balsamic vinegar roasted chickpeas, raw crackers and white mulberries.

Scrambled eggs with spinach and tomatoes on a Food Doctor pitta pocket with broad bean, asparagus and mint hummus, yum!

Even though my week has been pretty standard I have taken delight in lots of delicious food, which has been great!

Don’t for get to enter my Munchy Seed giveaway and check out my last vlog on my strength routine update!

Have a wonderful weekend everyone!

I’m pretty jealous if you class these meals as ‘standard’… they all look amazing to me! So colourful and fresh. I’m curious about the bush bok sweet potato… is it different to normal sweet potatoes?

I have seen a few people adding peanut butter to sweet potatoes – I am going to have to try it.

I think my light relief is sitting browsing through my tumblr feed! That’s how I relax before bed sometimes :-) Lurve sweet pot with nut butter and greek yoghurt :-)

Oh come on, that sweet potato picture cannot be legal ;) Seriously, where do you buy those Bushbok potatoes? Are they from a supermarket, because I’ve been looking everywhere up here and still cannot locate them. So delicious-looking.

I’ve always loved watching TV as a break when I’m really busy. I like surfing the net as well, but I’m on a computer all day at work, so it’s nice to take a break from it sometimes.

The post title’s great and so apt, although I think there’s more than a hint of delicious! I could reach in and take that socc pizza, it looks so good and those baked peaches and sweet potato look fab.
When I’ve had a mission at work, going for a ride afterwards always helps – bike or horse :-)

Right, this is the week I try socca!

Best thing I’ve eaten this week was a warm brioche roll with apricot compote. SO yummy.

Thank you! The sweet pot was amazing!

Jemma Andrew August 26, 2012 at 6:32 PM

You so should, it’s definitely a favourite of mine now!

Jemma Andrew August 26, 2012 at 6:33 PM

I’m exactly the same, it’s nice to take a break from the PC.

Jemma Andrew August 26, 2012 at 6:36 PM

It so is legal and very delicious! I got them by chance from Sainsbury’s from their Taste the Difference range. They were in the reduced section for 39p a bag and I thought that they were the normal variety of sweet pot. So glad that they wasn’t now as I’m loving this variety!

Tumblr is such a great way to relax and to feel inspired.

Jemma Andrew August 26, 2012 at 6:36 PM

Oh it’s so tasty!

Jemma Andrew August 26, 2012 at 6:38 PM

My week was very standard but my eats definitely made up for it! The bush bok sweet pots are amazing, much denser in texture and fluffier too.
