Thank you everyone for your amazing comments on my Sunday post. I think its great that so many of you are approaching a more relaxed lifestyle where your nutrition and fitness is concerned. Like Laura touched upon it seems healthy living bloggers seem to be coming full circle with their approach to fitness, which I think is a really positive thing.

Of course it’s Wednesday which can only mean one thing:
It’s time for WIAW of course! I love looking at what people eat on a daily basis, mainly because I’m a bit of a nosey parker, as my adorable mum would say!
This week I want to rewind to Monday again. I don’t know why but over the past couple of weeks my Monday’s have been pretty darn awesome to say the least. And as Monday’s go this week’s was so exciting as we had a meeting with out wedding coordinator at our reception venue and got making some final details for our wedding including choosing our wedding menu and wine list. I like to think of myself as a bit of a foodie and boy am I excited to eat the meal that we have picked.
My very exciting Monday kicked off super early with workout A at the gym followed by a very delicious breakfast after getting washed and ready at home.
Chai Cherry and Coconut Oats!
Holy cow! These were amazing! I had some extra time in the morning so I made my oats on the hob, the best way in my opinion. After brewing some chai tea I added this to the oats in the saucepan with fresh cherries and stirred in some full fat coconut milk at the end, which made the oats super creamy.
I know it’s not quite autumn yet, but I was certainly in the mood for autumnal eats that morning and these worked a treat!
We headed to our meeting at our reception venue and were suprisingly there for 2 hours getting down to business and going through the ins and outs of our wedding. With only 8 weeks left (yes, 8 weeks!!!) it was really nice to go over the day to come in fine detail so now we know what we still have left to organise.
All of that planning is thirsty work and I was very tempted by a hot chocolate, sorry I finished it before taking a pic…oopppps!
When I got home I was starving so made a mega salad of mixed salad leaves, butter nut squash, smoke mackerel, cucumber, red pepper and beets, yum!
After getting some work done, blogging and designing our wedding breakfast menus it was time for my usual afternoon snack. I decided to use the last of my Greek yoghurt with blackberries, a chopped peach, honey and fresh basil.
For dinner I thought I would get a little bit experimental and create a recipe for the blog, Red Thai Curry Falafel Burgers. These worked out so well and were super crisp on the outside and fluffy, as falafels should be in the middle.
I had mine in a wholemeal roll with mixed leaves, cheese and ketchup with some raw carrot sticks on the side, such a great meal.
I couldn’t resist the mini falafel burger that I made to test the recipe either. I’m so excited to blog this recipe.
After settling in for the night relaxing after quite a busy day I snacked on a chopped apple and salted pretzels with some melted dark chocolate for dipping. So good!
So it was quite a fantastic Monday all round with going over the final details of our wedding and lots of yummy food. I used to hate Mondays but at the moment I am loving them!
