My weekend in food!

Hi everyone, have you all been enjoying the weekend?  The weather has been lovely here in the UK, chilly but bright sunny mornings then hotting up in the day, love it!

I’ve been working again this weekend so it has been a little bit crazy and tiring.  On both Friday and Saturday night I fell asleep on the sofa, now that is either a sign of old age or exhaustion- I’m praying for the latter.  Although with all of these early nights I have been waking up well rested, positive and ready to tackle the day.

This weeks workouts have been really good:

Monday: workout A

Tuesday: 3 mile run

Wednesday: REST

Thursday: Body Balance

Friday: workout B

Saturday: Rest

This morning I have already had a lovely free style yoga and meditation session.  I’ve did a few sun salutations, hip opening exercises and stretches.  It was lovely taking some time out in the morning to practice yoga and meditate and collect my thoughts.  I think I will be meditating more in the future.

Tonight after work I’m going to go for an evening run and make the most of the sunshine.  I’m quite looking forward to it and thinking of doing 5 miles this time.  I’m not bothered by how fast I go anymore it really is the shear love of running that gets me out there.

I started yesterday morning with a massive green smoothie, which was much needed, I felt very refreshed after drinking this!  It contained a shed load of spinach, a banana, kiwi, almond milk and ice cold water, yum!

For quick and easy snacks I have been making the most of the bargain Nakd bard that I picked up the other day.

I had this Cashew Cookie bar with a lovely crisp apple taken from the fridge.

With all of this hot weather I have been craving salads like mad this weekend, more so than usual.  This one included mixed salad leaves, tomatoes, red onion, carrot ribbons, celery and a huge serving of caramelised onion hummus.  Oh this was good!

For a twist on a salad to take to work with me today I have made a Raw Curried Slaw Salad.  I’ve already had a taste of this and it’s delicious!

I grated carrot ribbons, added raw celery, broccoli and red onion and mixed them in a bowl.  Then I stirred in a few table spoons of full fat Greek yoghurt, madras powder, lime juice,black pepper,  salted cashew nuts and raisins for crunch and sweetness.

I’m so excited to get stuck into this for lunch today!

Dinner last night was a calprese style 2 egg omelette with spinach, tomatoes, basil and mozarella with steamed broccoli.  I just adore the flavours of mozarella, basil and tomatoes together!

This was swiftly followed by dessert:

Fresh figs with honey and Lindt Salted Caramel dark chocolate, holy yum!

Breakfast this morning was also amazing! A toasted wholemeal bagel topped with lots of crunchy PB and chopped strawberries.  A great way to start my Sunday!

IMG_3909Right now I’m enjoying a huge mug of my favourite Chai tea and getting ready for work.  I cannot go without my huge mug of tea in the morning, it’s such a huge part of my routine.

    Mmm, loving the look of the green smoothie and raw salad – I’m trying to think of what to replace the greek yoghurt in the dressing with aside from soy yoghurt which I’m trying to avoid. I’d love to recreate it somehow.

    I must admit I am not the meditating type – I am the coffee-driven go go go person and my brain never shuts up (doesn’t mean I’m remotely productive though!) enough to meditate. I think as you work so hard though, it’s very good that you can make some time to refocus.

    Loving the sunshine, although I’m sticking to going out in the cooler mornings as opposed to baking in the mid-day heat!

    I love the new look! When I clicked your blog yesterday, it said “under construction” and I was intrugued… it looks great :-)
    That slaw salad looks so tempting, and I still haven’t tried fresh figs! I loved the sun at the weekend – raining now though…

    Having recently read some other blog posts on meditation I’ve decided to start taking some time each morning and evening to meditate again, I definitely see huge benefits with less muscle tension and just generally feeling more relaxed!

    Hmmmm that’s a toughie, I’m not sure what you could replace the yoghurt with other than soy yoghurt. I will have to get my thinking cap on!

    I love meditation, I try to fit it in now and again when I need to relax. Wow that nakd bar is a bargain, they are like 3 times the price in Ireland!
