Thai Red Curry Falafel Burgers

Now if you don’t know by now I love falafel. I’ve been buying falafel from the supermarkets for so long now that I finally decided to make my own- check out my Sesame, Lime and Basil Falafel recipe, yummers!

After realising how easy it is to make falafel, seriously it’s so simple, I decided to get my thinking cap on and dream up another twist on the classic falafel recipe and came up with these:

With a major craving for a bean burger I thought I would take the most of the falafel mix and make them into patties instead. A decision that I didn’t regret as these babies are freakin’ delicious!

These burgers are so simple to make that there is only 6 ingredients and you can easily make these 4 ingredient falafel burgers by taking out the spring onion and the lime juice. I recommend leaving the coriander in for that added freshness.

Ingredients (vegan, makes 4 hearty burgers)

  • 400g of cooked chickpeas
  • 2 tbsps. of Thai red curry paste
  • 2 tsps. of lime juice
  • 1 spring onion chopped
  • 1 tbsp. of fresh coriander
  • ¼ cup of gram flour/chickpea flour (quantity may vary)
  • Seasonings
  • Fine polenta

Place the chickpeas in a food processor and blend until they break down and become whipped. Add the rest of the ingredients minus the chickpea flour to the food processor and then mix until well combined. When everything is well mixed start adding the chickpea flour bit by bit and judging when you have reached the correct consistency. The mixture shouldn’t be wet and sloppy but should be able to hold its shape.

Take some of the mixture it your hands and form burger shapes. Place on a tray or plate and leave them to rest in the fridge to firm up for minimum of 30 minutes.

Before cooking dust the burgers on both sides with some fine polenta and fry in a little oil in the pan. The polenta creates an insanely crunchy crust on the outside leaving the inside all fluffy.

Hmmmm….I wonder how many versions of falafel exist!? All I know is I want to eat them all!

    Oh my goodness this sound SO good!!! I absolutely LOVE falafel and I love that you’ve made this gluten free as I have to make my own now as the ready made ones have gluten in so I will definitely be making this! I may make a more indian flavoured version….mmm :)

    Your falafel recipes always look so delicious! I love falafel as a snack or in a light lunch but I’ve never had it as the main component of a meal. I love Thai red curries so the two flavours combined sound pretty appealing :)
