{WIAW} I can breathe again

Hello friends! I hope this week is treating you well.  It’s been a pretty hectic one for me as I have been working like a crazy woman packing and getting my thesis sent off to the printers…yay!

Yesterday I spent most of the day making sure everything was perfect, dotting all of the I’s and crossing all of the t’s.  It actually took most of the day, but I think that was because a part of me was apprehensive about parting with my thesis. It has been a part of my life for the past 4 years that just letting go of it just like that was actually rather difficult.

I did manage to send it to the printers though, and it feels freaking awesome! 

Lots of exciting things are happening in my life over the next few weeks with my wedding and imminent house move and thesis submission at the end of this week. Sending my thesis off to the printers is a real relief as it frees up so much of my time to concentrate on other things.

It’s like getting your first exam out of the way.  Some of the pressure has been lifted and you feel like you can breathe again.

Peas and Crayons

Now since it’s Wednesday, that mean’s that it is time for this week’s WIAW, yay!

Despite living like a hermit for the past couple of days I have been eating some pretty tasty food, obviously I have my priorities in check! =)

First off on Monday morning it was time for my usual Monday workout of workout A, a mix of gentle cardio and strength training.  I only have those week left of this routine.  I’m going to miss it as I have really enjoyed this strength routine.

When I got home I made myself a lovey bowl of warmed fruit including a chopped banana, blueberries and a fresh peach, added a Cherry and Oat Breakfast Muffin straight from the freezer and added some coconut milk.

That was the last of my muffins from the freezer =( but I will definitely be making some more in my new house for sure.

I had so many mugs of this tea that morning, it’s been so cold!

Later that morning I decided to take a break from working and treat myself to one of my bargain Cashew Cookie Nakd bars and more tea, yum!

For lunch I had a major salad craving so whipped up this plate of loveliness of mixed salad leaves, tomatoes, feta cheese, beets and half a chopped apples.  Oh my this was awesome, feta and apples make a tasty flavour combo!

I also snacked on the other half of the apple afterwards too.

During my afternoon break I snacked on some sweet strawberries, Honey Seeds and some crunchy PB, best snack EVER!

Fish was on the cards for dinner as I found some trout fillets in my freezer that needed using.  It’s crazy how food you forget you have in the freezer until it comes to emptying it out for a house move.

I pan fried the trout fillets and had one with steamed broccoli and a quinoa pilaf with olives, sundried tomatoes, artichokes and roasted squash…so good!

To celebrate the end of my thesis Alfie treated me to a fab apple pie for dessert with vanilla custard!

This was such a treat and was divine! The apple pie filling was encased in filo pastry rather than short crust pastry which made it a lot lighter. It was a great foodie way to celebrate the almost end of an era.

Well with my thesis pretty much out of the way, it means that I can get on with more wedding planning.  There is 38 days to go…eek!!!!

    I bet that is a huge weight lifted from your shoulders- well done for getting to the end of it.
    Each year I have that sort of feeling (but not as hard as a thesis) when I have to hand in my reports to the head- it is a lot of work to do on top of normal work, and the deadline always comes up so quickly!
    I have gone for porridge this morning as it is chilly at the moment.
