{WIAW} Deflated

Hello folks!  This week has been pretty fantastic so far as I’ve had Monday and Tuesday off from work so it has felt like a long weekend, ahhh so relaxed right now.

It hasn’t been all fun and relaxation over the past couple of days though as the final preparations for the wedding have been in overdrive.  I have been getting my DIY on.

Also, I had some disappointing news about s job application for a medical publishing position.  This job was perfect for me as I love science but I also like to indulge my creative side.  They actually withdrew the position, but the feedback about my written test wasn’t exactly great. I’m not into pity party’s but it felt like a bit of an anti-climax and it left me feeling really deflated.

No enough of my whining, lets get on to some food fun! 

Peas and Crayons

Yes, you all know that it’s Wednesday and that can only mean one thing…WIAW!

On Monday I was in the mood for a smoothie and lots of fruit, but I couldn’t be bothered to get my blender out and then clean it so I opted for chopped fresh fruit instead.

I filled a bowl with a chopped banana, grapes, and a chopped pear and topped it with Greek yoghurt, blueberry jam and smooth peanut butter and called it breakfast.  Sometimes a girl just needs a bowl of chopped fruit in her life.

For lunch I fancied a calprese salad and so I made one!  I mixed little gem lettuce with tomatoes, mozzarella, basil leaves, black pepper and extra virgin olive oil.  I love these salads!

Later I snacked on some new Special K sour cream and onion cracker crisps that I have been sent to review for the blog and some sweet chilli hummus. The flavour of the cracker crisps is quite mild so it didn’t clash with the hummus at all.

In the evening I made an awesome and simple honey and sesame stir fry with noodles, asparagus, sweet red peppers, baby corn and spring onion.  Stir fries are so great for a quick veggie packed meal.  J’adore!

Later in the evening I decided to drown my sorrows with some Trader Joe’s dark chocolate and went on a mini refined sugar binge with some chocolate covered hob nobs.  Not my usual preferred pick me up treats with the Hob Nobs but it felt right at the time.

I know I shouldn’t moan about not getting the job as they withdrew it anyways, but it was more of the feedback that got to me the most.  In this day and age I am very lucky to even have any kind of job.  It’s just that I don’t want to be like so many graduates that study so hard and then don’t manage to find their dream job afterwards. 

Fingers crossed something comes up soon.  I’ve got my optimistic head back on rather than my deflated one. =)

    I’m so sorry about the job….don’t let it get you down! When I feel disappointed, I think of certain times of great success in my life. Think of when you accomplished something that made you feel SO PROUD and how inspired you were, and work from there!

    I’m sure that something will come up – you just have to stay positive and learn from the feedback you got. You are clearly really talented and any employer would be lucky to have you!

    Oh sorry about your job interview! I guess all you can do is think positive, learn from the feedback and move on. Don’t dwell on it, onwards and upwards! Oh Hob Nobs are brilliant. They can make anyone smile :)

    I’m sure that you’ll find a job you love. Today actually I received a call about scheduling an interview for an internship I really wanted. Turns out I didn’t even take the interview though, because the internship was over this coming semester. And a lot of the classes I had already signed up for… are spring-only classes. Life sucks :P

    Your stir fry looks awesome by the way. Baby corn is so cute!!

    The mozzarella on your lunch salad looks delicious… and the Special K sour cream ‘n onion cracker chips are so good! I have to admit though, I always eat too many and get salt sores :(

    I deal with disappointment by focusing on the good things in life. I choose to spend time with family, close friends, or simply myself (using letting stress out at the gym or with a television series marathon).
