Firstly I would like to say that I have the most supportive readers in the entire blogosphere. Thank you all so much for your lovely comments on Monday’s post. It seems that many of us have felt the same way at some point in our lives. Like I mentioned at the end of the post I am in a much better place and super positive about all of those opportunities out there.
Monday marked my first day off in 11 days. I spent it wisely and practically did nothing all day! =)
When I woke up I used up the last of the unsweetened mincemeat from Christmas to make a simple bowl of sweet mincemeat oats for breakfast using water and unsweetened almond milk. I am already looking forward to next Christmas when I can eat these oats again! =)
Before my lazy day could start I had to go and pick Alfie up from work, he’d just finished 7 days of nights. Since I had the time I thought I would make some sort of an effort and try out some of my Christmas gifts.

After picking the hubby up we headed to Waitrose to see what they had on offer. Luckily enough they had some squash in, albeit Crown Prince squash and not kabocha, but still squash nonetheless. We also picked up some delicious sausages, apples, Greek yoghurt, cheese, Panini’s smoked mackerel, more caramel sauce, fresh dates and some share bags of Popchips that are currently on offer (£1).
There is nothing like a Waitrose shop. It was a struggle not to get carried away though as we are doing are regular grocery shop later in the week.
After unpacking the shopping I was more than in need of a snack:
I had some hummus with raw celery and some multi-seed thins with some coconut water on the side. I don’t think much of this particular flavour of coconut water to be honest.
The rest of the day was spent in my pyjamas napping and on the sofa watching TV. I did manage to make a lovely vegetable broth for lunch though using some homemade stock. I used onions, celery and carrots as the base and added spring greens and spices.
This was so yummy and I had this one with one of the Panini’s that we had bought from Waitrose. We got them so Alfie could try out the sandwich toaster that we received as a wedding gift; hope he doesn’t mind me stealing one! =)
The afternoon was spent polishing up my CV whilst a squash roasted in the oven and watching Home Alone, got to love multi-tasking. I snacked on some of the roasted squash when it came out of the oven and some apples.
For dinner I decided to make use of our new tagine (another lovely wedding gift). I have never cooked with one before, but couldn’t wait to try it out.
I made a lamb goulash type of dish and served mine with steamed greens and pomegranate seeds, delish. It was also a big hit with Alfie too which is also a bonus!
In the evening I decided to have some Greek yoghurt with maple syrup and ground hazelnuts. Seriously this has become one of my favourite quick and easy desserts. The yoghurt is just so creamy and nut and maple syrup combo is an all-round winner.
Other than picking Alfie up and going to Waitrose not much else happened. We were spent all day at home relaxing and it was just what we needed. It was if the world had come to a stand still whilst we were hibernating at home.
