Hello friends, how are your weeks shaping up? Luckily the snow has started to melt in my neck of the woods and has just turned to slush and ice, leaving the pavements like ice rinks but the roads are perfectly clear meaning that it’s easy to drive to work.
There is more snow forecast, but I don’t think it will be as bad as last Friday’s shock snowfall; I hope not anyways. The snow looks pretty and all but it really is a pain. Also it came a month too late, what happened to our white Christmas?
For this week’s WIAW I’m going to share what I ate and did (not a lot!) on Monday. Since I was working all weekend I decided to make Monday into another snow day, which was very much needed.
Before get my “lazy on” I did fit in the 30 Day Shred workout. I chickened out of trying level 3 and stuck to level 2. It’s such a great workout DVD for short and effective exercise. I was quite sweaty after this little workout session.
After gulping 2 huge glasses of water I made myself a post workout smoothie with a mug of cardamom chai tea with unsweetened almond milk:
The smoothie was delicious and contained squash, unsweetened almond milk, honey and cinnamon.
Call me a trampy but I decided to shower after breakfast as I had some rubbish to move in the garden. So, I had breakfast first then got to work in the garden then cleaned my stinky post-workout self up. Ha! I normally shower straight after a workout…promise! But this time round I didn’t see the point in getting dirty twice. Anyways, I put on some fresh PJs after showering and that pretty much set me up for the day.
After getting some blog work done I took a break and made myself some green tea which I had with one of Tam’s Coconut, Cougette and Chocolate Bars. I just couldn’t resist, they are really good!
Lunch was a delicious salad of mixed leaves, cucumber, tomatoes, avocado and soft centred boiled eggs. I made a simple dressing using rapeseed oil, cracked black pepper and salt.
This was really simple but tasted fantastic. I love food like this! The egg yolks were super creamy too!
In the afternoon I boiled a ham ready for a stew that I was making for dinner. I boiled it in water spiked with peppercorns, star anise and cloves to create a lovely homemade winter spiced stock. The kitchen smelled divine. By this time I was chilling on the sofa watching movies.
I did have to abandon my snow day later on and head out to pick my hubby up from work with a huge coat over my PJs…ha! =) When we got in I put together dinner. I had the pork stew for dinner with plantain, cauliflower mash and steamed broccoli. The stew was so easy to make that I think I will blog the recipe sometime soon.
Dessert was eaten whilst watching Lord of the Rings:
Organic natural yoghurt with pitted dates, yum!
Working the weekends can be a pain, but having a Monday off means that I can have a lovely relaxing day and recoup after a busy weekend. I love pottering about the kitchen and watching movies.
