{WIAW} The first signs of spring

The weather has been so lovely over the past week or so.  It’s been a far cry from the grey clouds and snow from not so long ago.  Lighter mornings, blue skies and sunshine hopefully mean that Spring is on the way.  Although it’s still a bit nippy outside and you still have to wrap up warm it’s nice to see the sun shining again.

I got a glimpse of my first signs of spring on my Sunday afternoon walk.

For this week’s WIAW link up party I’m going to share all of meals from Monday.  I started the day with a workout at my new gym.  I’m still just going with the flow with my workouts and I’m still loving this approach to exercise.  On Monday morning I fancied a strength workout with 10 minutes of cardio before and after my strength training. The workout lasted for about 50 minutes.

When I got home I made scrambled eggs and fried some smoked bacon for breakfast.  This was so tasty!  Alfie had the same thing except with toast and he really enjoyed it too.

Mid morning I took a break from studying and made a chai latte with coconut oil.  I cannot get enough of caffeine free chai lattes at the moment, yum!

I decided to have a working lunch and made a wonderful spinach salad.  It included spinach, a chopped peach, organic French brie, plain almonds and dried cranberries…amazing!  Using spinach leaves instead of normal salad leaves makes a nice change and a great way to get more iron into my diet.

The temptation of some barbecue flavoured Popchips was too hard to resist!

Later in the afternoon I snacked on a couple of apples and had a lovely mug of nettle tea to see me through the afternoon.

I also had one of the Alibi pretox drinks in the citrus flavour.  This reminded me of the carbonated bitter lemon drinks my Nan used to buy ages ago.

Dinner was pretty fantastic!  I steamed some broccoli and added some roasted squash to some smoked tofu, plantain and some sauerkraut. Ok, so it seems like a bit of mash up of different flavours, but it tasted really good!

Dessert was a couple of squares of blueberry dark chocolate.  I love this chocolate so much.  It’s definitely become one of my favourite dark chocolates.

I must have studied really hard on Monday as I ended up falling asleep on the sofa in front of the TV.  Ha! That makes me sound so old, oh well, it will all be worth it I’m sure.

It’s so exciting to think that spring may be just around the corner.  I’m so tired of dull and grey skies.  I’m also looking forward to swapping my wardrobe around and getting my spring/summer clothes out, but I think we will have to wait a little for the temperatures to rise.

    I have seen loads of signs of spring recently- some daffodils have been flowering for a few weeks (super early) and loads of crocus flowers were out when I drove through town yesterday. I love the lighter evenings and mornings, as generally the day feels longer and it is nicer getting outside again more.

    Mmmmm, spinach and brie – that would go lovely in a wrap :) I’m always wary of tofu; I’m a little reluctant to try it properly (i’ve had it in miso soup but that’s it).

    I have to try this blueberry dark chocolate! Sounds fantastic! Also, love your mug with the cute face on it. It is currently 7 degrees where I live, so thinking about Spring is just depressing. :(

    I thought spring had arrived yesterday but no, back to grey skies & cold winds today :-( . Your smoked tofu dish looks really tasty! and you’ve now got me craving pop chips. I didn’t even know they came in barbecue flavour. I must seek them out!

    All of your eats look delicious, but I have to say that I’m most jealous over your gorgeous weather! Flowers in February?! Gimme, gimme! We’ve still got a good amount of snow here, but hopefully Spring comes soon because I could really use a little more sunshine and warm weather!

    That brie looks great! I’ve never had brie before, but that salad of yours is making me
    think I’d better go out and buy some. It’d be tricky for me to limit myself to
    just a few squares of chocolate. I’d probably eat the whole bar and then feel
    guilty about it, but like I said a few posts ago, I need to change this silly
    relationship I seem to have with chocolate. Your blog is certainly inspiring me
    to do so!

    Love that spring is making an appearance! I have a trip to London coming up in April, so I’m looking forward to that and keeping my fingers are crossed for some nice weather! Spring is also when I’ll hear back from grad schools, which could relieve a lot of my stress related to my plans for the future. Unfortunately, where I am in Canada, spring seems like a long ways away!

    The sun’s actually had some warmth – and I saw daffodils in bud the other day, love it! I can’t wait for longer days and warmth :-)

    I did find it hard not to eat the whole bar, it’s just too good! How exciting that you are coming to the UK. I hope you have a fab trip, London is amazing. Good luck with the grad school applications.

    Yes the first signs of spring are apparent in the UK. There’s still a bit of a chill in the air, but we are getting there. :-)

    Yes it is getting lighter and warmer, I am getting so excited for spring! The only thing I wish with that blueberry chocolate is that there was blueberry chunks, a bit like a fruit and nut bar, I think that would be great!
