Well hello there you incredibly, fantastically wonderful Friday!
Can you tell that I’m happy that it’s Friday?! I feel so out of touch with the blogisphere this week as it has been work central over here. Another crazy week in the office has involved lots of long hours, bringing work home and getting home late. Although I’m exhausted its great being part of a well oiled and extremely busy machine.
Due to burning the candles at both ends I haven’t actually made it to the gym once this week. It’s not that the want of going wasn’t there, I’ve just been so tired that I thought it was best to give myself the break. At first not getting to the gym did bother me as I do love it, but for the sake if my body I knew that I was doing the right thing. I can slip back in to my usual routine next week. Normally, I would try and squeeze as much into my day regardless, but I’m currently trying to be kind to my body and prioritize my activities to prevent burning myself out.
Since this week has been a bit of a whirlwind my food has been what has ever been easiest to satisfy my belly. Quick salads have been a staple for lunches this week:
This fig, but and spinach salad was particularly good. Figs make any salad look pretty no matter how simple it may be. Every bite of this was delicious, if I’d had some goats cheese I would have added that too.
I’ve been loving yoghurt bowls this week. They are just so quick to make and you can virtually throw anything in to the mix.
Yesterday at work for breakfast I had some organic natural yoghurt with fresh apricots and nuts, delish!
If anything, being busy and trying to lead a healthy lifestyle has taught me how to be resourceful. The other night I made a speedy dinner of sautéed vegetables in a green pesto sauce topped with Serrano ham and two fried eggs. This plate of thrown together goodness was so good and took less than 10 minutes to make.
In the early hours of yesterday morning I woke up to make marinade some pork in some jerk chicken spices, now that’s a dedicated foodie right there! When I got home I cooked the pork the oven and added some pan fried peppers and spring onions and had some on a bed of mixed leaves. Ah, this satisfied my taste buds perfectly, it was just lovely.
I’m really looking forward to this weekend I don’t have anything major planned. Essentially it’s going to involve hibernating at home and eating lots of squash. Sometimes there has to come a point where you just have to say ‘no,’ whether that is to someone else or to yourself because you’re trying to do too much. I’ve realised that there is no shame in admitting that you can’t physically add any more to your work load. You’re not a failure. In fact, you are bloody brilliant for realising that you have reached your limit and want to do the best for your body and well being.
