Not that we’re the most unromantic couple in the world or anything, but we’ve never really celebrated Valentine’s Day, never! Sometimes we might buy cards as a nod to the day and I have received the odd box of chocolate over the years, but very rarely. We don’t need a national holiday to declare our love, but I know there’s a lot of you out there that will be celebrating, and there is no better way to your loved ones heart than food!
With flowers and chocolate being the top Valentine’s gifts, today I’m sharing one of my favourite healthy alternative chocolate recipes. These super light chocolate muffins contain a secret ingredient, chia seeds – so they are full of superfood health powers with every bite.
- 1/3 cup Chia seeds
- 4 eggs
- 1 1/2 cup almond flour
- 4 tbsp unsweetened cocoa powder
- 1/4 cup powdered fruit sugar or stevia
- 1/2 tsp gluten free baking powder
- 1/2 cup melted coconut butter
- Preheat the oven to 160 degrees and line a muffin tray with 6 muffin cases.
- Beat all of the ingredients together in a bowl until just combined. a
- Next portion the batter across 6 muffin cases and bake for 30-40 minutes until cooked, allow to cool on a baking rack.
- To test that the muffins are cooked, use a cocktail stick or skewer to pierce through the centre. The cocktail stick should come out clean if the muffins are fully cooked.
I decided to only use cocoa powder as opposed to dark chocolate to keep the sugar content down and used a natural sweetener instead so processed sugar. The almond flour means that these are just perfect if your loved one is allergic to gluten, but you could also experiment with other gluten-free flours too.
If like me, you’re not celebrating Valentine’s Day, treat yourself anyway and whip up a batch of these. I love making these for when I’m looking for a healthier indulgence than a box of chocolates to get my sweet fix. They also store wonderfully in the freezer, for when you ever get the urge to eat them all in one go!
