A high protein savoury waffle recipe made with quark that is naturally low in fat, courgettes and flavoured with mild curry spices. Since these can be made in advance, they make a great weekday breakfast option, easy weekend brunch idea or a leisurely lunch at work – just take them from the freezer when required!
We’re mad about waffles here, and normally there isn’t a weekend that goes by when they don’t make an appearance. Normally it’s a toss-up between classic waffles or Belgian waffles loaded up with lots of berries and maple syrup. However, wanting to change things up a bit I decided to venture down the savoury waffle route.
- 300 g /2 cups spelt flour
- 100 g /1/2 cup Graham's The Family Dairy Quark
- 3 eggs
- 1 courgette grated zucchini
- 400 ml /2 cups almond milk
- 1/2 tsp baking powder
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 2 tbsp finely chopped coriander
Set up your waffle maker as per the manufacturer's instructions (I used the Classic Waffle setting).
Stir all the dry ingredients together in a bowl and then beat in the quark, almond milk, eggs and grated courgette.
When ready, pour the batter into the the waffle maker and cook.
Serve with your favourite toppings and enjoy!
Obviously, being the weekend I didn’t fancy venturing to the shops to get ingredients for breakfast, mainly because I was still in my pyjamas (not a good look!), so I had a rummage in my fridge and cupboards to see what I could use to make a delicious savoury waffle recipe. Thankfully, I had some Graham’s The Family Dairy Quark in my fridge, which has a gorgeous creamy texture and is a great ingredient to add to lots of different meals.
Quark is a soft cheese with a tangy flavour so it works well in sweet and savoury dishes. Being naturally low in fat and high in protein, it’s ideal to use if you’re looking to cut back on the saturated fat and calories as part of a healthy and balanced lifestyle. I used the quark to replace the butter that is traditionally used in waffle recipes, resulting in a light and fluffy texture. Graham’s also produce a vanilla flavoured quark that would be lovely to use in sweet baked goods.
At the moment, I’m just throwing courgettes into everything – did you see my Morello Cherry, Lime and Courgette Cake? They have a really neutral flavour and add a lovely moistness that makes these waffles light and fluffy. Of course, another bonus is that by adding extra vegetables into your meals you’re also boosting their value and contributing to your 5-a-day quota too.
