This lighter version of everyone’s favourite coleslaw recipe is the perfect accompaniment to pack in all of your picnics, to serve at your BBQ’s and as a salad topping. Loaded with lots of crunch and texture from the raw vegetables and seeds there is also the added sweetness from the apple, making this one of my favourite coleslaw recipes yet!
Coleslaw is one of those things that I love, but always consider a treat because most shop bought versions tend to be laden with heavy mayonnaise. In these instances, I prefer to make my own version as I’m in total control of the ingredients and the quantities used in the recipe. Generally, making your own homemade versions are not only healthier but also cheaper, like this No Mayo Apple Coleslaw that I’m sharing with you all today.
- 250g/2 cups grated or spiralised cucumber
- 250g/2 cups grated or spiralised carrot
- 150g/1 cup edamame beans
- 50g/1/2 cup mixed seeds
- 2 granny smith apples finely sliced
- 1 red onion finely sliced
- 200g/1 cup full-fat Greek yoghurt
- 2 tbsp apple cider vinegar
- 2 tbsp lemon juice
- 1.5 tbsp honey
- 2 tbsp tahini
- Salt and pepper to taste
- In a bowl, mix together the lemon juice, Greek yoghurt, honey, tahini, salt and pepper until well combined. Set aside.
- Mix all the vegetables, apple and seeds together in separate bowl before pouring over the sauce.
- Toss the coleslaw so that everything becomes coated with the sauce.
- Serve and enjoy!
We recently got a proper picnic basket complete with cutlery and plates, all very grown up! I love packing it and going on family day trips (normally to a National Trust gem) with all of our favourite foods for a feast in the sunshine – well, when the weather decided to cooperate that is. Apple and pork are a match made in foodie heaven, so it was a no-brainer to serve the apple slaw with these quiches, lovely either hot or cold. I enjoy how bright and summery this coleslaw looks with all of those gorgeous vegetables. The fact that it contains no mayonnaise means that it’s lighter than traditional recipes, perfect if you’re looking to eat a little healthier this summer.
