Christmas just wouldn’t be Christmas without gingerbread in some shape or form. Whether it’s a gingerbread house that you make with the kids (or buy), gingerbread cookies or cake, it just smells and tastes like Christmas and it just wouldn’t be the same without it.
Now it’s official December I’m over the moon that it’s time to unleash all those festive recipes. I baked this gingerbread bundt cake weeks ago and I’ve been dying to share it with you all. Bundt cakes are so easy to make and I love the particular mould that I used for this one, the way the maple icing runs down the crevices reminds me of snow on a snowy mountain.
- 200g self raising flour
- 250g coconut sugar
- 3 large eggs
- 5 tbsp melted coconut oil
- 4 tbsp molasses
- 2 tbsp ground ginger
- 1 tsp mixed spice
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 5 tbsp icing sugar
- 2 tbsp maple syrup
- 1-2 tbsp water
- Preheat the oven to 160 degrees and grease a bundt cake tin with cooking spray or oil.
- In a bowl, mix all of the ingredients together, until well combined.
- Pour the cake mixture into the bundt tin and level off the top.
- Bake in the oven for 50-60 minutes, or until a cocktail stick comes out clean when inserted into the centre of the cake.
- Leave to stand for 15 minutes before turning out.
- Stir all the ingredients together until nice and smooth.
- Once the cake has cooled, generously drizzle the icing over the cake.
- Cake stores well in an airtight container for up to a week.

It’s like an interiors junkies dream place, full of lots of unique items that you would unlikely to find on the mainstream high street. They’re doing some great work with the Prince’s Trust at the moment to help support vulnerable young people to engage and succeed in education.
I love looking at the Christmas displays for inspiration to create the perfect family Christmas, and a few weekends ago I ventured in to look for a throw to make my armchair more hygge for the festive season and some Christmas decorations. There were lots of goodies in the cookware section that also caught my eye. Seriously, it’s like a treasure trove in there and I’m such a magpie for it all.
Now back to that bundt cake…
Deliciously sticky, like all ginger cakes should be this one is spiked with mixed spice, cinnamon, nutmeg, and ginger. With all those warming spices, you can imagine how the kitchen smelt while it was baking. I couldn’t wait to cut a slice after it just came out the oven. I used the all in one method, meaning that creating this bundt cake is completely faff-free, making it the perfect cake to bake for ease over the hectic Christmas holidays.
