Love enjoying fresh fruit to start your day? Me too, and today I’m serving up a delicious leisurely brunch recipe to try this weekend. Making waffles has become one of our favourite weekend traditions. It’s so nice to sit down with a big stack of these oat waffles topped with a sauce made with softened apricots, strawberries and basil, and maple syrup for added sweetness and catch up with family and friends.
Apricots are in season now and I tend to eat them just as they are for a snack, however, I’ve looked at more creative ways to use them in my cooking. With us being right in the middle of the strawberry season too, they were the perfect match. Also, I really love adding herbs to fruit to give them a different flavour with very little effort. Basil has a sweet but peppery flavour which compliments the softened fruits, and for your information, your kitchen is going to smell amazing while the sauce is bubbling on the hob.
If a big stack of waffles wasn’t special enough for brunch, how about topping them with some delicious frozen yoghurt to take them to the next level? - 250 g rolled oats
- 250 ml oat milk (or milk of your choice)
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 12 strawberries
- 6 apricots
- 2 tbsp chopped basil
- 1-3 tbsp maple syrup
Set up your waffle maker as per the manufacturer's instructions (I used the classic waffle setting).
Beat the oats, milk, eggs, vanilla extract, and baking powder together until smooth.
When ready, pour the batter into the waffle maker and cook.
In a heavy bottomed saucepan on a medium heat, warm the strawberries, apricots, basil and maple syrup until the fruit has softened. Approximately 5-8 minutes.
To serve, top the oat waffles with the fruity basil sauce and a scoop of yoomoo's honey 'n' granola frozen yoghurt.

If you don’t have a waffle iron at home, then the batter is thick enough to make pancakes instead and they taste just as good. Rather than a traditional waffle batter, in this recipe, I used oats, which give the waffles a light fluffy wholesome texture. A great option for a summer brunch served with a fruity mocktail and lots of cheer.
