Whilst in London on Monday, I did a spot of shopping and amongst other things I picked up this fab loose fitting striped vest tops and floral scarf from H&M. I was actually quite reserved when I went shopping and didn’t go overboard, but I have a few new bits to dress the bump now.
I woke up pretty early and made my warm water and lemon drink and replied to some emails and read some blogs for a while before making some breakfast:
Fresh strawberries, blueberries, chia seeds and a pot of 2% Greek yoghurt really hit the spot!
After dropping Alfie off at work I headed straight to the gym for a workout, where I did 20 minutes of gentle cardio and a strength routine. I’ve been using the gym ball to do my squats up against the wall. It gives additional support to my back and means that I can get deeper into the movement with ease. I was really pleased with all of that, it’s nice just to move now and I really appreciate that I still can during pregnancy.
For lunch I made up some plantain pancakes, which will feature in my plantain tutorial later this month. They are a great way to use up plantains that have gone super soft. I had these with some mixed salad leaves, peppers and half and avocado, yum.
I popped to the shop to get some supplies in the afternoon before getting on with some more work. To get my dose of green goodness I made myself a very simple green smoother for my afternoon snack. This included banana, spinach and unsweetened almond milk and is probably the most basic green smoothie that you will come across – it tastes amazing too!
For dinner I wanted something simple again and cooked some Quorn sausages with some steamed broccoli, sweet potato and a cheeky dollop of ketchup. This is one of my favourite meals right now as it’s so simple and quick to make. I have some outdoor reared pork sausages in the freezer that are dying to be used up in a meal like this too.
These are super addictive…
Raw chocolate covered goji berries that I picked up from WholeFoods. I settled down with these and some peppermint tea to see out the evening.
A pretty nice day of food there! I’m all about healthy fuss free meals, especially when I’m pretty busy. I try and get an even mix of all of the food groups, but protein and streamed veggies are always a winner for a fast dinner. Other healthy fast food favourites of mine would be mince cooked in pasta sauce on top of pasta or courgette ribbons, a veggie pack omelet, salad and a socca pizza. Of course leftovers are always a winner in my books, especially when they can be reincarnated into completely different meals.
