Happy Wednesday lovely people, hope you are having a brilliant week so far! I’ve been loving the spring sunshine this week, it really puts a bounce in your step. Here’s hoping that it will stick around for Easter, not long until the long weekend now.
It is the middle of the week again, or I guess it’s nearly the end of the week considering the public holidays coming up…anyways it’s Wednesday, meaning that it’s time for WIAW. I still enjoy doing these daily eats posts as I love seeing what everyone else is eating – just call me nosey.
Yesterday I was all out of lemons for my usual warm water and lemon drink so I went without and had a mug of peppermint tea instead. I’m still trying to stay clear of any caffeine.
For breakfast I made some porridge on the hob using organic Irish oats and water. I’m not sure why, but I added some full fat butter into oats alongside some honey, cinnamon and a chopped apple. The butter gave it a lovely caramel taste when mixed with the honey.
It was quite a busy morning catching up with some blogmin and writing so I felt like I definitely needed a mid-morning snack:
I love Bounce balls, but this spriulina and ginseng one really wasn’t a favourite, it tasted a little off to me. I’m more of a macadamia and coconut kind of girl.
For lunch I had some mixed salad leaves topped with some leftover smoky minced beef stew, avocado and a slice of buttered wholemeal bread from the bakery. This was super yummy and kept me full for the whole afternoon. I seem to like putting avocado on top of everything at the moment.
Dinner was really quick. I baked some falafels in the oven and served them with a salad of mixed leaves, organic feta, tomatoes and red peppers with some corn salsa on the side. For something so simple it tasted amazing, although I was a little concerned about the feta cheese as it is unpasteurised which is no-no in pregnancy, but I have read elsewhere that it’s fine to eat. Pregnancy and food is such a mind field!
I fancied desert later in the evening and opted for some full fat Greek yoghurt, frozen cherries and a crumbled orange and chocolate chip cookies. It’s been a while since I’ve had yoghurt and frozen berries in my life, but it never gets old.
What a great day of food! There are lots of, in my eyes, weird but wonderful combinations in there such as the butter in my porridge and the corn salsa with my falafels, but they actually worked.
