Happy Wednesday friends! I hope this week is treating you well. My belly is full of excitement this week awaiting my scan at the weekend. I’m literally counting down the days…not long now!
This week has been another busy one with lots to get organised business wise and around the house. I was really glad that we took last weekend to just chill out and hardly stepped out of the house. Sunday, my chosen day for this weeks WIAW, was particularly lovely.
I had a bit of a lie in, which is unusual for me but much needed before making my warm water and lemon drink and taking my supplements.
For breakfast I had a bowl of 2 chopped pink lady apples topped with organic natural yoghurt, honey and almonds, yum!
I spent the rest of the morning curled up on the sofa reading my pregnancy magazine and cooking in the kitchen. For some reason I had a cravings for a proper Sunday lunch, but wanted to cook something a little bit different from the normal roast dinner.
Instead I made my Chinese 5 Spice Chicken, with homemade egg fried rice and garlic, ginger and soy stir fried vegetables. This was really lovely and Alfie loved it. We made it more feel a little bit special by drinking our non-alcoholic drinks out of wine glasses, almost like a restaurant set up, but at home. =)
To curb any potential cabin fever we went out for a drive in the countryside in Alfie’s new bat mobile. Don’t ming the Jason written on the mirror, Alfie hasn’t decided to change his name. They were added by the original owner who adored this car and we haven’t taken them off yet. =) We stooped by Blenheim Palace and made use of our annual passes and went for a long walk.
During my time in the kitchen in the morning I whipped up a Honey and Almond Cake for Alfie. I just wanted to do something nice to say thank you for being such an amazing husband. We each had a slice with a side of berries and mint tea after our drive and walk. Seriously yummy! The recipe will be on the blog soon. I carried on reading for the rest of the afternoon.
I didn’t really feel like having any dinner later in the evening as I was still full from the lunch and the late afternoon slice of cake. Alternatively, I made up a bit of a snack plate of things that needed using up in the fridge: half and avocado, roasted aubergine, carrot sticks, buttered wholemeal bread, hummus and falafels with some coconut water.
Such a relaxing Sunday! I didn’t manage to do my planned yoga session, but didn’t mind much. I like taking time out to switch off now and then it does me the world of good. Also, going for an afternoon drive in the countryside with a walk thrown in has become one of my favourite things to do.
Although, this has become a bit of a new hobby since Alfie got his new car. We are very lucky to live right in the middle of nowhere, so we are blessed with beautiful scenery all year round. Do you like afternoon drives or walks in the countryside?
