Happy Sunday friends! Firstly, thank you for your lovely comments and messages on C&C’s makeover, I’m so happy that so many of you love it and the response has been overwhelming. Sorry to be so gushy (and perhaps OTT) about it, but you guys just ROCK!
This is just the beginning of the changes that I want to make to the blog, my first newsletter is all set to enter your wonderful inboxes this month and you can sign up here if you haven’t already. Doesn’t that green smoothie look good? I’ve blended up a storm in the kitchen recently and just can’t get enough of them.
This particular one was a creamy apple and ginger creation that I think I might save for a recipe post as it’s just be too rude not to share.
This week has been a mixed bag for all different reasons. Not long after eating this baked sweet potato topped with butter, fried eggs with salad we got a knock on the door after from our lovely neighbour telling us that someone had knocked the driver’s side wing mirror off my car.
They did a damn good job on it too as the entire thing needs replacing which after some research is going to be quite costly. I can’t believe that they didn’t have the decency stop and leave their details or what they were doing driving so close to my car! Our Sunday afternoon movie marathon was pretty much ruined afterwards. Thankfully, Alfie is good at putting things back together and has done a great job with some string and tape to stick the mirror back on as a short-term fix.
Not only is my poor car injured, my brand new phone iPhone 6 was sent off for repair as the screen has gone blue – personally I think it’s dead as a dodo, but I’ll see what the service centre has to say. It really hasn’t been my week where repairs are concerned, but I’ve found comfort in some delicious healthy food. Quinoa is one of my favourite foods and I love to use to make this delicious quinoa porridge recipe that I make with raisins, cashews, maple syrup and apple – a brilliant nourishing breakfast!
Taking a break from my smoothie addiction, I made up this bowl of organic natural yoghurt with chopped banana, strawberries and peach and crumbled oat cookies (saving recipe for e-book!) and a healthy drizzle of maple syrup.
We went out for lunch with our friend’s this week and I couldn’t resist this gorgeous goat’s cheese and grilled courgette salad, so yummy! I’ve got to try to recreate something like this at home because it was just full of all the ingredients I enjoy, you can’t go wrong with a big chunk of melty goat’s cheese.
Aiden tried his first coconut chicken curry this week and he seemed to like it, not that he ate that much but I remain hopeful. I was sure to portion out his little helping before adding all the spicy heat though. We both had ours with steamed broccoli and Alfie had his with basmati rice.
This fully loaded beef taco salad was A-MAZ-ING! It was just full of spice and flavour and very easy to make. I had my taco filling on top of some mixed leaves, tomatoes, cucumber, avocado and went heavy with the grated cheese, jalapenos and organic natural yoghurt.
This Rebel Kitchen chai mylk drink was the perfect post-pilates treat. I think this is my favourite flavour from their range, but all are pretty tasty if I’m honest.
This weekend, so far has been better than last week and started on a high with this lovely breakfast of bacon, scrambled egg, avocado and ketchup. I had a lovely day shopping yesterday, playing with my little man, writing and developing some new recipes for my E-book.
Whilst in town, I treated myself to a chai latte and this vegan and gluten-free chocolate and coconut flapjack that I saved for an afternoon treat at home. It went perfectly with a sleeping bubba, a mug of green tea and catching up with my favourite blogs…bliss!
Well I’ve got my fingers crossed that nothing else breaks around here as we really could have done without the hassle, but what can you do, it’s just one of those unlucky things that happen sometimes. I’m just glad that it was only the wing mirror that was damaged as it could have been a lot worse, considering how close they got to the car – I couldn’t have been any closer to the curb!
I’m sure that they will get their dose of karma, whoever they are. My phone is also repairable and I know I have nothing to worry about there. It’s just been one of those weeks, but I’m having the loveliest of weekends to make up for it.
