Hi everyone, I hope you are all enjoying your weekend. I’m feeling positive and upbeat at the moment because there is so much newness in our lives. We finally got a concrete date for our house move, which is literally in a few weeks time, everything is crazy at the minute. Also, we picked up our brand new family car yesterday.
Our smaller car just wasn’t cutting it size wise, Aiden’s pushchair didn’t leave much room for much else in the boot and the new car is something that we can grow into. Speaking of my little man, we’re also planning his first birthday celebrations, which I can’t believe are just around the corner…where has the last year gone?
If all that wasn’t exciting enough, I spotted figs in the supermarket the other day! As soon as I saw them I was dreaming about this salad. Figs must be one of the prettiest fruits out there and I had mine chopped with goat’s cheese, pecans, rocket, honey and salt. Not going to lie I think this salad made my weekend.
Bread isn’t something that I buy very often, but when I do, sourdough is one of my favourites. I had it twice this week toasted and spread with a mashed avocado, melty goat’s cheese and cucumber for breakfast and lunch.
This pomegranate, mango and grilled halloumi salad with rocket, cucumber and lentils totally rocked my world. It sounds like an odd combination but it really worked. I think halloumi, goat’s cheese and feta have to be my ultimate favourite cheeses.
It has been soup weather most of this week so I was happy when these new Amy’s Kitchen soups arrived on my doorstep to review for the blog for Organic September. I had the rustic tomato soup flavour for lunch the other day and it was lovely and comforting – I’m looking forward to trying the other flavours.
Banana bread buckwheat pancakes got my lazy Sunday off to a good start last week. I added a pinch of cinnamon to them for a real autumnal vibe. Topped with Greek yoghurt and strawberries, mama and baby were very happy with this breakfast.
Another favourite breakfast of mine was this plate of fried pancetta with eggs cooked in coconut oil and half an avocado.
Here’s my healthy version of fish and chips! I pan-fried some salmon that I marinated in jerk paste and served it with homemade mushy peas and roasted sweet potato and red onions, too good. I cooked the sweet potatoes in the Vonshef air fryer as a challenge set by Domu and I was pretty pleased with the result.
I’m also back on a smoothie kick this week after going off them a bit now that the weather has cooled off. This was a mango and banana green smoothie that tasted like summer – pity that the weather was screaming otherwise!
After finding myself in a workout rut the past couple of weeks, my love for it has been reunited. Mixing things up and revisiting 30-day Shred, which left me flat-out on the floor has helped. More newness came in the form of these Adidas crop top and leggings that I was kindly sent to try from JD Sports and they have given me a motivational boost. I don’t normally wear crop tops to work out, but I’m definitely seeing the advantages of them.
Now I’m off to face plant myself into some more figs…
