If you’re searching for a quick meal, a quick lunch, something to put in the kids’ lunch boxes, or a protein-packed snack, these egg muffins are for you. Eggs are a favourite of our everyday grocery shopping as a family because they’re so flexible. And though the fridge is almost dry, knowing that we have a supply of eggs in the kitchen to make a healthy meal with little ingredients is comforting.
It may be challenging to find the time to prepare dinner for the family when you have a career, a home, and children to look after. I teamed up with Peppadew, who create a tasty variety of piquante peppers and roasted red peppers, which I used in this simple recipe.
Having supplies on hand, such as Peppadew’s roasted red peppers, makes preparing easy, nutritious meals a breeze. They pack a lot of flavour into a small amount of time and effort – certainly something we’d like to introduce to our shopping list as a pantry staple.
Not a fan of feta cheese? If you like, you can apply grated cheddar or goats cheese to the mix. Your creativity is the only constraint here, and you can really get creative with various flavour combos.
Regular readers know how much I love sweet and salty flavours, so the sweet roasted red peppers with the mildly salty feta cheese is a match made in heaven for me. Swapping the feta for Monterey jack cheese and incorporating jalapenos to the mix for some spicy fire will be just as fine – surely one to try next time!
