250g/2 cups grated or spiralised cucumber
250g/2 cups grated or spiralisedÂ carrot
150g/1 cup edamame beans
50g/1/2 cup mixed seeds
2 granny smith apples finely sliced
1 red onion finely sliced
200g/1 cup full-fat Greek yoghurt
2 tbsp apple cider vinegar
2 tbsp lemon juice
1.5 tbsp honey
2 tbsp tahini
Salt and pepper to taste
- Combine the lemon juice, Greek yoghurt, tahini, honey, salt and pepper in a mixing bowl until well mixed. Keep it on the side.
- In a separate dish, combine all of the veggies, appe, and seeds before pouring over the sauce.
- Toss the coleslaw with the sauce so it is evenly covered.
- Serve and devour!
