Breakfast is my favourite meal of the day. It really gets my day started, and I feel so much happier because I’ve given my body something healthy and nourishing to help me get through a busy day. Breakfast time with a toddler may be messy, but these cinnamon eggy crumpets with a simple berry sauce are short and tasty.
Crumpets are a favourite in our kitchen, and we normally serve them easily covered with butter and honey. Last weekend, though, when baking crumpets, we craved something a little more decadent, such as French toast, however we were out of bread. Crumpets are a perfect substitute for bread when making French toast since they soak up the eggy sauce too well.
On the weekends, a leisurely breakfast or brunch is a must, and these always hit the mark. I used gluten-free, wheat-free, and milk-free crumpets from Newburn Bakehouse by Warburtons, which are ideal for those with food allergies!
I couldn’t tell the difference between the gluten-free crumpets from Newburn Bakehouse and standard crumpets. These are fantastic because they eliminate the need for those with coeliac disease or gluten allergy to lose out on a typical breakfast treat. You might serve these eggy crumpets with just about everything, but our favourite way to serve them is with this simple berry sauce made with only three ingredients. It’s made of tasty berries, and you can monitor the amount of sugar in it, making it better than store-bought varieties. What’s more, this fast sauce can be made in the microwave, so what’s not to like?

- For the Eggy Crumpets
4 Newburn Bakehouse by Warburtons crumpets
250ml almond milk (or milk of your choice)
1-2 tbsp pure maple syrup
1 tbsp cinnamon
- For the Easy Berry Sauce
200g frozen mixed berries
2 tbsp water
1-2 tbsp maple syrup
- How to Make Crumpets
- In a big mixing cup, combine all of the ingredients and soak the crumpets in the eggy mixture. Allow for a 5-minute rest period.
- In a frying pan, heat a little oil and cook the crumpets on both sides until golden brown.
- How to Make a Simple Berry Sauce
- As the crumpets are soaking, combine all of the ingredients for the berry sauce in a microwave-safe bowl and cook in the microwave for 2-3 minutes.
- Wait till the berries are hot and tender berries. If more sweetness is desired, add more maple syrup.
