One thing that struck me about blogging when I started 6 and a half years ago, is the fantastic community that I was welcomed in to. I’ve always said, that even if I wasn’t doing this full-time, I would still continue to blog because of all the wonderful things that it’s introduced into my life and the fantastic connections that I have made. In this rather poignant post, I’m sharing a delicious easy gingerbread popcorn snack, inspired by an incredibly brave lady.
Blogging has become a channel for me to share my creativity with like-minded people and I adore how supportive the blogging community can be and the friends that I have made. Of course, blogging can have its downsides, but these are definitely outweighed by the positives. I’ve met so many amazing people through blogging in person and online and one of those people is Isabella King of Coriander Queen. Tragically, last month Izzie passed away and as a way to celebrate all her marvelous work and life a group of bloggers who knew her online are recreating a selection of her recipes in her memory.
An easy and quick homemade popcorn snack flavoured with delicious gingerbread.
- 80g popcorn kernels
- 1 tbsp muscovado sugar
- 1 tsp ground cinnamon
- 1 tsp mixed spice
- 1.5 tsp ground ginger
- 2 tbsp vegetable oil
- 25g butter
In a bowl, stir together the butter, sugar, cinnamon, mixed spice and ginger and melt in a microwave on a medium heat. Stir together until well combined.
In a large, heavy-bottomed saucepan, pour in the vegetable oil and coat the base of the pan.
On a medium heat, pour in the popcorn kernels and place the lid on top. Shake the pan gently so that the kernels become coated in the oil.
Shake the pan now and then and the kernels will begin to fluff up and pop. When the popping has ended, turn off the heat.
Serve in a separate bowl and pour over the gingerbread sauce.
For the first time in 2 years, Alfie and I are off to the cinema today. Those with children will know that it’s a struggle to make time for yourself, let alone each other. I’m so looking forward to our cinema date and after scrolling through Izzie’s recipes, it seemed apt that I had chosen to recreate her cinnamon spiced popcorn. Tasty munchies while watching a movie is a must and popcorn is an obvious choice. I loved Izzie’s simple way of taking a classic cinema snack to the next level and I hope she would have liked my gingerbread twist.
Sadly, I never knew Izzie in person, however, she was always so sweet and kind when we interacted online. Her blog is full so many delicious creations that it was always a lovely place to visit for inspiration. Some of Izzie’s friends are taking part in Race for Life to help raise money in her memory. I think I will be always touched by Izzie’s story and the strength and positivity she showed throughout her battle. Moreover, the way the blogging community has come together to celebrate Izzie life has moved me. I’m proud to be part of such a community and so happy that blogging introduced me to Isabella King.
