Delicious green Manzanilla olives filled with chorizo and garlic marinated with lemon, thyme, and sun-dried tomatoes.
Don’t you just love how you can throw a few ingredients together to create something delicious? By far, this is one of my favourite things about getting stuck in the kitchen. I find pottering about the kitchen and experimenting with ingredients so therapeutic. Also, it’s wonderful to see all the flavours come together and watch a dish come to life.

Delicious green Manzanilla olives filled with chorizo and garlic marinated with lemon, thyme, and sun-dried tomatoes.
- 150g Fragata Manzanilla Olives Filled With Chorizo (brine drained)
- 150g Fragata Manzanilla Olives Filled With Garlic (brine drained)
- 2 tbsp lemon rind
- 4 sprigs of fresh time (removed from the stalk)
- 8 sundried tomatoes (halved)
- 250 ml Fragata Extra Virgin Olive Oil

In a large bowl, mix together all of the ingredients until evenly distributed.

Pour over the olive oil, mix together ensuring that everything is well coated with the oil.

Store in an airtight preserving jar and keep in the fridge until required or serve right away.
Of course, there is there is nothing better than sharing your creations with family and friends and hearing how much they love your food (I caveat this with “hopefully” because you can’t please everyone and that’s OK!). Olives are the perfect addition to any buffet, meze or as an appetizer over drinks with friends. I always serve a bowl up that I’ve spiced up with a few ingredients when we have friends over and they always go down a treat. Some favourites have been my Mediterranean Pickled Olives, Hot & Spicy Anchovy Stuffed Olives and Spanish Marinated Olives With Manchego Cheese.
We always have a tin of Fragata Manzanilla olives in the house, mainly because that they’re so juicy and delicious. I love the ones filled with different ingredients because they make it so easy to add flavours to dishes without any extra effort. Morrisons is now stocking a range of filled olives by Fragata and I’ve used the chorizo and garlic variety in this recipe, but they also stock the anchovy and piquillo pepper versions too.
The spicy smokey flavours of the chorizo with the salty olives work really well with the sweet sun-dried tomatoes, that sweet and salty flavour combination is one of my favourites. The lemon zest adds a lovely zing and freshness and the garlic filled olives add a lovely punch of flavour too.

Now this sounds like a really interesting way to have olives. My parents are really into trying different olives and ways to have them so I may have to make this next time they come around.

We love Olives but eat it just as it is on its own. Your dish looks so sophisticated, can’t believe its so simple. Will definitely be recreating this using the Fragata Olives.

I was the same when I was younger, but I’ve really grown into the taste.
I love olives and I can see this combination on the table, next to a pint of beer, in summer, exactly as the Spanish have them. It could be a perfect snack for it.

I love how Fragata has vegetarian friendly olive choices like a garlic and piquilo pepper verison, that is definitely my idea of a tasty appetizer or snack. I am going to Italy next month so I hope that I will be able to eat as many olives as humanly possible!

YUM! You had me at chorizo! I never used to like olives, then I went to Turkey, met a man who said to me that you need to try them 11 times before you know if you’ll like them or not. Low and behold, now I love them! xxx

My husband loves chorizo and is a recent oliv convert, so we are going to have to try these.
