Tarragon & Lemon Hasselback Potatoes, a fresh and summery idea to flavour the humble potato that works wonderfully with fish, poultry and cheese.
I’m always looking for easy and fresh ways to jazz up my potato side dishes. It’s so easy to stick with boiling, steaming or roasting potatoes, which is great, however sometimes it’s nice to inject them with a punch of flavour to take them to another level altogether.
Summer time screams to me citrus and fresh flavours, especially in savoury dishes as it can really help to cut through heavier ingredients and works so well with the lighter meals that we naturally turn to in the warmer weather. Tarragon isn’t something that I cook with often, but when wanting a potato side dish to go along with my summery fish dish, I thought that it would be a lovely addition. I always have lemons and garlic in the house and the 3 together are a marriage made in heaven.

To make the Hasselback potatoes, I used British Gems that are current season favourites and back in Sainsbury’s stores now. They’re picked straight from the soil and delivered straight to the door within 48 hours, which is very impressive and nice to know that they are so fresh. I love their distinctive buttery flavour which works so well with a variety of ingredients, especially the ones that I’ve used in this particular recipe.

- 780 g British Gem potatoes
- 4 cloves of garlic grated
- 3 tbsp tarragon finely chopped
- Zest of 1 lemon
- 2 tbsp rapeseed oil (or oil of your choice)
- Seasonings

Preheat the oven to 200 degrees

Place the potatoes one at a time on a tablespoon and slice along the whole length.

Put the potatoes in an ovenproof dish and drizzle with rapeseed oil (or a cooking oil of your choice) and sprinkle over the grated garlic. Bake for 30-40 minutes.

When cooked transfer the potatoes to a large bowl and add the chopped tarragon, lemon zest and seasonings. Stir well and allow to stand for a few minutes before serving.

These sound so fresh and tasty. I tend to skip potatoes through the summer as find them too heavy with salads but these sound perfect for summer BBQs with plenty of fresh leaves!

I have tried making these a few years ago, not your recipe of course and failed lol. I will be trying this again when we get home from hols. They look amazing and im a huge fan of lemon infused side dishes x
Baby potatoes are brilliant for a lighter meal but still filling. The mix of lemon with the tarragon sounds very refreshing. I think I would make these with chicken for an alternative to a full Sunday roast.
